Breakfast:
Cinnamon French Toast (Vegetarian, Lactose-Free)
This lovely breakfast option is a healthy alternative to other bread-based breakfast foods. Since this weight loss recipe does not contain milk, it also has a relatively low amount of saturated fat.
Ingredients:
Four eggs, Two teaspoons of ground cinnamon, Four slices of wholegrain bread, Olive oil, Raspberries, blueberries, strawberries, Honey
How to Make:
Crack four eggs into a bowl, and whisk ground cinnamon into it with a fork. Once mixed, soak each bread slice into the egg mixture. Then heat a large frying pan on medium heat, and add a small amount of olive oil to it.
One by one, add each bread slice to the frying pan. Let each side cook for around 2 minutes until it turns into a beautiful golden brown. You can then serve these French toasts with cut-up raspberries, blueberries, or strawberries. You could even drizzle honey on top for added sweetness.
Lunch/Dinner:
Vegetarian Red Curry
Curry is one of the more delicious foods you can add to your diet. It has a lot of health benefits, as it contains potent, anti-inflammatory properties and may even boost your digestive health. It is also highly versatile and can be customized as per your tastes.
Ingredients:
- One heaped tablespoon of red curry paste
- 1 x 375ml can of light evaporated milk
- One zucchini, carrot, red capsicum, chopped
- 125g chopped frozen spinach
- 1x 250g block firm tofu, chopped
- Two spring onions, sliced, to serve
- Handful parsley, chopped, to serve
- 2 cups cooked brown rice
How to Make:
Heat a large saucepan or a pot over medium heat. Add a curry paste to it, and let it cook for a couple of minutes. Add light evaporated milk to the paste and stir till it is properly combined.
Increase the heat, and let the mix boil. Once it does, reduce the heat back to medium and add all the chopped vegetables into it. Stir and let it cook for a couple of minutes. Add the chopped tofu into the curry and simmer for around 10 minutes. Feel free to stir it occasionally.
Sprinkle the curry with spring onions and chopped parsley, and pour it on top of your cooked brown rice to serve.
